Noodles in Japan (soba, udon, raamen)
A popular form of light meal in Japan is noodles, the most common of which are soba, udon and raamen.
Soba noodles are made of buckwheat flour, which is kneaded and formed into thin, string-like noodles. The noodles are boiled and served in a hot broth topped with onions or other vegetables. Soba noodles are also enjoyed dipped in a cold broth.
Udon noodles are made from kneaded flour, and are thicker than soba noodles, but served the same way.
Raamen noodles are Chinese style noodles which are served in a hot Chinese style soup. There are numerous variations and ways to serve all three types, but all are eaten in a slurping style.
